Ingredients

1 cup unsalted butter, softened

4 oz cream cheese, softened

1 cup granulated sugar

1 tsp vanilla extract

2 1/4 cups all-purpose flour

1/4 tsp salt

1/2 cup apricot preserves or jam

Powdered sugar, for dusting (optional)


Instructions

  1. In a large bowl, beat the butter and cream cheese together until smooth and creamy.
  2. Add the sugar and vanilla extract; beat until light and fluffy.
  3. Gradually mix in the flour and salt until just combined. Do not overmix.
  4. Chill the dough for 15–20 minutes if too soft to handle.
  5. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  6. Roll tablespoon-sized dough balls and place them 2 inches apart on the sheet.
  7. Press a thumbprint or spoon into each ball to create an indent.
  8. Fill each indent with about 1/2 teaspoon of apricot preserves.
  9. Bake for 12–14 minutes until edges are just golden.
  10. Cool for 5 minutes on the tray, then transfer to a wire rack. Dust with powdered sugar if desired.
