Ingredients

1 pound ground beef

3 cups diced potatoes (peeled or unpeeled)

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10.5 oz) cream of mushroom soup

1 can (14.5 oz) diced tomatoes, undrained

1 cup shredded cheddar cheese (plus extra for topping)

1/2 cup chopped onion

1/4 cup milk

1 tsp garlic powder

1/2 tsp black pepper

1/2 tsp smoked paprika

Salt to taste

Optional garnish: sliced green onions, sour cream


Instructions

  1. In a skillet over medium-high heat, cook ground beef and onion until browned. Drain fat.
  2. Layer diced potatoes in the bottom of your slow cooker.
  3. Add corn, kidney beans, and the browned beef mixture.
  4. In a bowl, whisk together the soup, tomatoes, milk, garlic powder, pepper, smoked paprika, and salt.
  5. Pour sauce mixture into the slow cooker and stir gently.
  6. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours.
  7. Sprinkle shredded cheddar over the top 15 minutes before serving. Let melt.
  8. Garnish and serve hot.
