1 lb ground beef (80/20)

Salt and pepper

1 tbsp neutral oil

For Baconnaise Sauce:

4 slices crispy bacon, finely chopped

1/2 cup mayonnaise

1 tbsp Dijon mustard

1 tsp smoked paprika

1 tsp garlic powder

1/2 tsp black pepper

1 tsp apple cider vinegar

Toppings:

Caramelized onions (1 large onion, slow-cooked in butter/oil)

Dill pickle chips

Optional: sharp cheddar cheese

Buns:

2 brioche burger buns

1 tbsp butter (for toasting)

Instructions

  1. Make the Baconnaise: Combine all sauce ingredients in a bowl. Mix well and refrigerate.
  2. Caramelize Onions: Cook sliced onion over medium-low heat in butter/oil for 20-25 minutes until deep golden brown.
  3. Toast the Buns: Butter the cut sides and toast in a skillet until golden.
