Ingredients

3 cups cooked, shredded chicken breast (rotisserie works great)

1 (10 oz) can enchilada sauce (red or green)

1 (4 oz) can diced green chilies

1 tsp ground cumin

1 tsp garlic powder

1/2 tsp smoked paprika

1/2 tsp chili powder (optional)

1 (8 oz) package cream cheese, softened

1 cup sour cream

2 cups shredded Monterey Jack or Mexican blend cheese, divided

6 large flour tortillas

1 tbsp olive oil (for greasing the baking dish)

Salt and pepper to taste

Fresh chopped cilantro (for garnish)

Diced tomatoes (for topping)


Instructions

  1. In a large bowl, mix shredded chicken, half the enchilada sauce, green chilies, cumin, garlic powder, paprika, chili powder, and cream cheese. Stir until creamy and combined. Add 1 cup of cheese.
  2. Lay tortillas flat and spoon chicken mixture into the center of each. Roll up tightly and place seam-side down in a greased 9×13-inch baking dish.
  3. In a bowl, mix remaining enchilada sauce and sour cream. Pour evenly over burritos and top with the rest of the cheese.
  4. Bake at 375°F (190°C) for 20 minutes covered with foil, then uncover and bake for another 10 minutes.
  5. Let rest for 5 minutes before garnishing with diced tomatoes and chopped cilantro. Serve warm.
