8 oz spaghetti
1 tbsp olive oil (plus extra if needed)
3 garlic cloves, minced
1/2 cup sun-dried tomatoes (packed in oil), sliced
2 cups fresh spinach, chopped
1 cup heavy cream
1/3 cup grated Parmesan cheese
Salt and freshly cracked black pepper, to taste
1/4 tsp red pepper flakes (optional)
1/4 cup reserved pasta water (as needed)
Instructions
- Cook the spaghetti in a large pot of salted boiling water until al dente. Reserve 1/4 cup of pasta water, then drain.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and cook for 30 seconds.
- Stir in sun-dried tomatoes and cook for 1–2 minutes.
- Add chopped spinach and cook until wilted, about 1–2 minutes.
- Lower the heat and pour in heavy cream. Stir to combine.
- Add Parmesan cheese and stir until melted and smooth.
- Season with salt, black pepper, and red pepper flakes.
- Add cooked spaghetti to the sauce and toss to coat. Use reserved pasta water as needed to thin the sauce.
