Ingredients

3 ears of corn, sliced into 1-inch rounds

2 tablespoons olive oil

1 teaspoon chili powder

½ teaspoon smoked paprika

¼ teaspoon cayenne pepper (optional)

Salt, to taste

Juice of 1 lime

2 tablespoons fresh cilantro, chopped

Optional: crumbled Cotija cheese or feta for topping


Instructions

  1. Shuck the corn and remove the silk. Slice each cob into 1-inch rounds. Pat dry if very juicy.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Add corn rounds in a single layer and sear for 3–4 minutes on each side until golden brown.
  4. Reduce heat to low, then sprinkle chili powder, smoked paprika, cayenne, and salt over the corn.
  5. Toss gently to coat and cook for another minute to let spices bloom.
  6. Remove from heat and squeeze fresh lime juice over the corn.
  7. Garnish with chopped cilantro and optional Cotija or feta cheese.
