Ingredients

1 lb (450g) shrimp, peeled and deveined

2 cups snow peas, trimmed

1 1/2 cups mushrooms, sliced

2 tbsp vegetable oil

2 cloves garlic, minced

1 tbsp ginger, minced

2 tbsp soy sauce

1 tbsp oyster sauce

1 tsp sesame oil

1/2 tsp sugar

1/4 cup water or chicken broth

Salt and pepper to taste

Optional: red pepper flakes or chili oil for heat


Instructions

  1. Wash and trim snow peas. Slice mushrooms evenly. Pat shrimp dry with paper towel.
  2. In a bowl, whisk together soy sauce, oyster sauce, sesame oil, sugar, and broth or water.
  3. Heat 1 tbsp oil in a large skillet or wok over medium-high heat. Cook shrimp 1-2 minutes per side. Remove and set aside.
  4. Add remaining oil to the pan. Sauté garlic and ginger for 30 seconds. Add mushrooms and cook 2-3 minutes.
  5. Add snow peas and stir-fry 2 minutes until crisp-tender.
  6. Return shrimp to the skillet, pour in the sauce, and toss everything together. Cook 1-2 minutes more.
  7. Serve hot with rice or noodles. Garnish with sesame seeds or chili oil if desired.
