Ingredients

Dough:

1 cup warm milk (110°F)

2 1/4 teaspoons active dry yeast (1 packet)

1/4 cup sugar

1/4 cup melted butter

1 teaspoon vanilla extract

3 1/2 cups all-purpose flour, plus extra for dusting

1 teaspoon salt

2 large eggs

Cheesecake Filling:

8 oz cream cheese, softened

1/4 cup sugar

1 teaspoon vanilla extract

Strawberry Topping:

1 1/2 cups fresh strawberries, hulled and diced

1/4 cup sugar (for the glaze)

1 tablespoon water

1 tablespoon cornstarch

Cream Cheese Frosting:

4 oz cream cheese, softened

1 cup powdered sugar

2 tablespoons milk

1/2 teaspoon vanilla extract

Instructions

  1. Activate the yeast: In a small bowl, combine warm milk (110°F) and sugar. Sprinkle the active dry yeast over the milk and let it sit for 5–10 minutes, until frothy.
  2. Prepare the dough: In a large mixing bowl, combine the yeast mixture with melted butter, vanilla extract, and eggs. Gradually add the flour and salt, stirring until the dough comes together. Knead for 6-8 minutes until smooth and elastic.
  3. Let the dough rise: Transfer the dough to a greased bowl, cover it with a damp towel, and let it rise for 1 to 1.5 hours, until doubled in size.
  4. Make the cheesecake filling: In a medium bowl, beat together cream cheese, sugar, and vanilla extract until smooth and creamy.
  5. Roll out the dough: Once the dough has risen, punch it down and transfer it to a floured surface. Roll it out into a 12×18-inch rectangle. Spread the cheesecake filling evenly over the dough.
  6. Shape the rolls: Roll the dough tightly from the long edge and slice into 12 even rolls. Place them in a greased 9×13-inch pan and let them rise for another 30 minutes.
  7. Bake the rolls: Preheat the oven to 350°F (175°C). Bake the rolls for 20-25 minutes or until golden brown.
  8. Prepare the strawberry topping: In a saucepan, combine strawberries, sugar, water, and cornstarch. Cook over medium heat until the mixture thickens and strawberries soften. Set aside to cool.
  9. Make the frosting: In a bowl, beat together cream cheese, powdered sugar, milk, and vanilla extract until smooth.
  10. Assemble the rolls: Once the rolls have cooled slightly, spread the cream cheese frosting on top, followed by the strawberry glaze.
