Ingredients

Cookie Dough:

1 cup unsalted butter, softened

1 ½ cups granulated sugar

1 large egg

2 tsp vanilla extract

2 ¾ cups all-purpose flour

½ tsp baking powder

½ tsp salt

Strawberry Mix:

¾ cup fresh strawberries, chopped

1 tbsp sugar

Cream Cheese Filling:

6 oz cream cheese, softened

¼ cup powdered sugar

½ tsp vanilla extract

Crumble Topping:

½ cup all-purpose flour

¼ cup brown sugar

¼ cup melted unsalted butter

Pinch of salt


Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Mix chopped strawberries with 1 tbsp sugar and let sit for 10-15 minutes.
  3. Blend cream cheese, powdered sugar, and vanilla until smooth. Chill.
  4. Cream butter and granulated sugar until fluffy. Add egg and vanilla.
  5. In another bowl, whisk flour, baking powder, and salt. Gradually mix into wet ingredients.
  6. In a small bowl, stir crumble topping ingredients together until sandy.
  7. Scoop dough onto baking sheets and flatten slightly. Press a thumbprint into each.
  8. Fill with a spoonful of cream cheese, top with strawberries, and sprinkle crumble.
  9. Bake 13–15 minutes, until edges are golden. Cool 5 mins before transferring to a rack.
