2 cups cooked white or brown rice
2 large boneless, skinless chicken breasts, cut into bite-sized pieces
1 cup broccoli florets
¾ cup frozen peas
2 green onions, chopped (for garnish)

½ cup low-sodium soy sauce
¼ cup honey or brown sugar
2 tablespoons rice vinegar
1 tablespoon sesame oil
1 teaspoon fresh ginger, grated
2 cloves garlic, minced
1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)
Optional Add-Ins:
1 tablespoon sesame seeds (for garnish)
½ teaspoon red pepper flakes (for a little heat)
½ cup shredded carrots for extra crunch
Instructions
- Prepare the Teriyaki Sauce: In a medium saucepan over medium heat, combine soy sauce, honey (or brown sugar), rice vinegar, sesame oil, grated ginger, and minced garlic. Stir well and bring to a gentle simmer. In a small bowl, mix the cornstarch with water until smooth, then slowly whisk it into the sauce. Continue stirring until the sauce thickens, then remove from heat and set aside.
- Cook the Chicken: In a large skillet over medium heat, cook the bite-sized chicken pieces until lightly browned and cooked through, about 5-7 minutes. Once cooked, remove from heat.
- Assemble the Casserole: Preheat your oven to 375°F (190°C). In a large mixing bowl, combine the cooked rice, cooked chicken, broccoli florets, and peas. Pour about half of the teriyaki sauce over the mixture and toss everything to coat evenly.
