Ingredients

For the Casserole:

2 cups cooked white or brown rice

2 large boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup broccoli florets

¾ cup frozen peas

2 green onions, chopped (for garnish)

For the Teriyaki Sauce:

½ cup low-sodium soy sauce

¼ cup honey or brown sugar

2 tablespoons rice vinegar

1 tablespoon sesame oil

1 teaspoon fresh ginger, grated

2 cloves garlic, minced

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

Optional Add-Ins:

1 tablespoon sesame seeds (for garnish)

½ teaspoon red pepper flakes (for a little heat)

½ cup shredded carrots for extra crunch


Instructions

  1. Prepare the Teriyaki Sauce: In a medium saucepan over medium heat, combine soy sauce, honey (or brown sugar), rice vinegar, sesame oil, grated ginger, and minced garlic. Stir well and bring to a gentle simmer. In a small bowl, mix the cornstarch with water until smooth, then slowly whisk it into the sauce. Continue stirring until the sauce thickens, then remove from heat and set aside.
  2. Cook the Chicken: In a large skillet over medium heat, cook the bite-sized chicken pieces until lightly browned and cooked through, about 5-7 minutes. Once cooked, remove from heat.
  3. Assemble the Casserole: Preheat your oven to 375°F (190°C). In a large mixing bowl, combine the cooked rice, cooked chicken, broccoli florets, and peas. Pour about half of the teriyaki sauce over the mixture and toss everything to coat evenly.
  4. Bake the Casserole: Transfer the mixture into a greased 9×13-inch baking dish. Spread it evenly, then drizzle the remaining teriyaki sauce on top. Cover with foil and bake for 20 minutes. Remove the foil and bake for another 5-10 minutes, allowing the top to slightly caramelize.
  5. Garnish and Serve: Once baked, remove the casserole from the oven and let it sit for 5 minutes to allow the flavors to meld. Garnish with chopped green onions and sesame seeds. Serve warm and enjoy!
