Ingredients
1 ½ pounds ground beef
1 medium onion, chopped
1 bell pepper, chopped
1 cup frozen peas and carrots
1 can cream of mushroom soup
1 cup shredded cheddar cheese (plus extra for topping)
4–5 medium potatoes, peeled and sliced thin
2 tablespoons olive oil or butter
½ teaspoon garlic powder
½ teaspoon onion powder
Salt and pepper to taste
Optional garnish: chopped chives or parsley
Instructions
- Peel and thinly slice the potatoes (about 1/8-inch thick). Parboil for 5 minutes, then drain.
- In a large skillet, heat olive oil or butter over medium heat. Add chopped onion and bell pepper; sauté 3–4 minutes.
- Add ground beef to the skillet. Cook until browned. Season with garlic powder, onion powder, salt, and pepper.
- Stir in cream of mushroom soup and frozen peas and carrots. Simmer for 5 minutes.
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Layer half of the potatoes in the bottom of the dish. Spread beef mixture over the top.
- Sprinkle 1 cup shredded cheddar cheese over beef layer. Add remaining potato slices.
