Ingredients

Cake Layers:

2 cups all-purpose flour

1 ½ tsp baking powder

½ tsp baking soda

½ tsp salt

1 cup unsalted butter (softened)

1 ¾ cups granulated sugar

4 large eggs

1 tbsp vanilla extract

1 cup buttermilk

Caramel Frosting:

1 cup unsalted butter

1 cup brown sugar

½ cup heavy cream

3 cups powdered sugar

1 tsp vanilla extract

Turtle Filling:

1 cup pecan halves (toasted)

½ cup mini chocolate chips

1 cup thick caramel sauce

Caramel Ganache Topping:

¾ cup caramel sauce

2 tbsp heavy cream

Optional Garnish:

Frosting swirls

Caramel or chocolate drizzle

Extra pecans or chocolate chips


Instructions

  1. Preheat oven to 350°F (175°C). Grease and line three 8-inch round cake pans.
  2. In a medium bowl, mix flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream butter and sugar until fluffy. Add eggs one at a time, then vanilla.
  4. Alternate adding dry ingredients and buttermilk, starting and ending with the dry mix.
  5. Divide batter evenly into pans and bake for 22–25 minutes. Cool completely on wire racks.
  6. For frosting: Melt butter and brown sugar in a saucepan. Boil for 2–3 minutes, then stir in cream. Cool slightly, then beat with powdered sugar and vanilla.
