Ingredients
For the Cookie Base:
1 cup (2 sticks) unsalted butter, softened
1/2 cup granulated sugar
2 cups all-purpose flour
1/2 teaspoon vanilla extract
1/4 teaspoon salt
For the Caramel Filling:
1 cup soft caramels (such as Kraft or Werther’s), unwrapped
2 tablespoons heavy cream
For the Chocolate Topping:
1 cup semi-sweet or milk chocolate chips
1 teaspoon vegetable oil or coconut oil
Instructions
- Prepare the Cookie Dough – Beat the butter and sugar together until light and fluffy. Mix in the vanilla, then gradually add flour and salt until a soft dough forms. Chill for 15–20 minutes if needed.
- Shape and Bake – Preheat oven to 350°F (175°C). Grease a mini muffin tin. Roll dough into 1-inch balls, place them in the tin, and press down to create a well. Bake for 10–12 minutes until golden. Reinforce the well while warm, then let cool.
- Make the Caramel Filling – Melt caramels with heavy cream in a microwave-safe bowl, heating in 20-second intervals and stirring until smooth. Spoon caramel into each cookie cup and let it set for 10–15 minutes.
- Melt the Chocolate – Heat chocolate chips with oil in 20-second microwave bursts, stirring until smooth. Spoon or drizzle over the caramel layer and spread evenly.
- Let Set & Serve – Allow the chocolate to set at room temperature or refrigerate for faster setting. Carefully remove cookie cups from the tin and enjoy!
