Ingredients

For the Chicken:

2 cups cooked chicken breast, diced or shredded

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil or butter (for cooking)

For the Pasta:

12 ounces spaghetti

1 teaspoon salt (for boiling water)

1 tablespoon butter (optional)

For the Cheesy Sauce:

2 tablespoons butter

2 cloves garlic, minced

1 can (10.5 ounces) cream of chicken soup

1 cup heavy cream (or half-and-half)

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

4 ounces cream cheese, softened

1 cup Velveeta cheese, cubed

1/2 teaspoon cayenne pepper (optional)

1/2 teaspoon salt

1/2 teaspoon black pepper

For Garnish (Optional):

Fresh parsley, chopped

Red pepper flakes


Instructions

1. Cook the Pasta

  • Bring a large pot of salted water to a boil.
  • Add the spaghetti and cook until al dente, following package instructions.
  • Drain and set aside, reserving 1/2 cup pasta water.

2. Cook the Chicken

  • Heat 1 tablespoon olive oil or butter in a large skillet over medium heat.
  • Add the diced chicken, seasoning with garlic powder, onion powder, paprika, salt, and pepper.
  • Cook for 3-4 minutes until slightly golden and heated through. Remove from skillet and set aside.

3. Make the Cheese Sauce

  • In the same skillet, melt 2 tablespoons butter over medium heat.
  • Add minced garlic and sauté for 30 seconds.
  • Stir in the cream of chicken soup and heavy cream until well mixed.
  • Reduce heat to low and gradually add cheddar, mozzarella, Velveeta, and cream cheese.
  • Stir constantly until smooth. Season with cayenne, salt, and pepper.

4. Combine Everything

  • Add cooked spaghetti to the sauce, tossing to coat.
  • Stir in the cooked chicken.
  • If the sauce is too thick, add a splash of reserved pasta water.

5. Serve & Garnish

  • Remove from heat and let sit for a couple of minutes.
  • Garnish with fresh parsley and optional red pepper flakes.
  • Serve warm and enjoy!
