Ingredients
For the Chicken:
2 cups cooked chicken breast, diced or shredded
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil or butter (for cooking)
For the Pasta:
12 ounces spaghetti
1 teaspoon salt (for boiling water)
1 tablespoon butter (optional)
For the Cheesy Sauce:
2 tablespoons butter
2 cloves garlic, minced
1 can (10.5 ounces) cream of chicken soup
1 cup heavy cream (or half-and-half)
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
4 ounces cream cheese, softened
1 cup Velveeta cheese, cubed
1/2 teaspoon cayenne pepper (optional)
1/2 teaspoon salt
1/2 teaspoon black pepper
For Garnish (Optional):
Fresh parsley, chopped
Red pepper flakes
Instructions
1. Cook the Pasta
- Bring a large pot of salted water to a boil.
- Add the spaghetti and cook until al dente, following package instructions.
- Drain and set aside, reserving 1/2 cup pasta water.
2. Cook the Chicken
- Heat 1 tablespoon olive oil or butter in a large skillet over medium heat.
- Add the diced chicken, seasoning with garlic powder, onion powder, paprika, salt, and pepper.
- Cook for 3-4 minutes until slightly golden and heated through. Remove from skillet and set aside.
3. Make the Cheese Sauce
- In the same skillet, melt 2 tablespoons butter over medium heat.
- Add minced garlic and sauté for 30 seconds.
- Stir in the cream of chicken soup and heavy cream until well mixed.
- Reduce heat to low and gradually add cheddar, mozzarella, Velveeta, and cream cheese.
- Stir constantly until smooth. Season with cayenne, salt, and pepper.
4. Combine Everything
- Add cooked spaghetti to the sauce, tossing to coat.
- Stir in the cooked chicken.
- If the sauce is too thick, add a splash of reserved pasta water.
5. Serve & Garnish
- Remove from heat and let sit for a couple of minutes.
- Garnish with fresh parsley and optional red pepper flakes.
- Serve warm and enjoy!
