Ingredients
2 cups cooked chicken breast, shredded or chopped
2 cups elbow macaroni or cavatappi
1 tbsp olive oil
1/2 onion, finely chopped
2 cloves garlic, minced
1 (4 oz) can green chilies
1/2 tsp ground cumin
1/2 tsp smoked paprika
1/2 tsp chili powder
Salt and pepper to taste
2 tbsp all-purpose flour
2 cups chicken broth
1 cup milk
1 cup heavy cream
2 cups shredded Monterey Jack cheese
1 cup shredded sharp cheddar cheese
1/2 cup frozen peas or corn (optional)
Fresh cilantro or parsley, chopped (for garnish)
Instructions
- Cook pasta according to package directions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add chopped onion and cook until soft (3–4 minutes). Stir in garlic and cook another 30 seconds.
- Add green chilies, cumin, smoked paprika, chili powder, salt, and pepper. Cook for 2 minutes to bloom the spices.
- Sprinkle in flour and stir for 1 minute to form a roux.
- Gradually whisk in chicken broth, then milk and heavy cream. Simmer until slightly thickened (5–7 minutes).
- Lower heat and stir in cheeses until melted and smooth.
