Ingredients
For the Crust:
1 ½ cups graham cracker crumbs
¼ cup granulated sugar
½ cup unsalted butter, melted

½ cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
½ cup sour cream
6 oz white chocolate, melted

1 cup fresh strawberries, chopped
¼ cup granulated sugar
1 teaspoon lemon juice
1 teaspoon cornstarch mixed with 1 tablespoon water

Instructions
Step 1: Prepare the Crust
- Preheat oven to 325°F (163°C) and grease a 9-inch springform pan.
- Combine graham cracker crumbs, sugar, and melted butter in a bowl.
- Press the mixture into the bottom of the pan evenly.
- Bake for 8-10 minutes, then set aside to cool.
Step 2: Make the Strawberry Swirl
- In a saucepan over medium heat, cook strawberries, sugar, and lemon juice until juices release.
- Add the cornstarch mixture and stir until thickened.
- Blend until smooth and strain if desired. Let cool.
Step 3: Prepare the Cheesecake Filling
- Melt white chocolate and let cool slightly.
- Beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing gently.
- Stir in vanilla, sour cream, and melted white chocolate.
Step 4: Assemble the Cheesecake
- Pour half of the cheesecake batter over the crust.
- Drizzle half of the strawberry sauce and swirl gently.
- Repeat with the remaining batter and sauce, swirling again.
Step 5: Bake Using a Water Bath
- Wrap the pan in two layers of aluminum foil.
