  • 2 pounds Yukon Gold potatoes
  • 1/3 cup extra virgin olive oil
  • 4 cloves garlic minced
  • 1/4 cup fresh lemon juice
  • 1 cup chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh thyme optional, for garnish

Instructions
 

  • Preheat the oven to 400°F (200°C) and lightly grease a large shallow baking dish.
  • Cut the potatoes into halves or quarters. Place in the dish and toss with olive oil, garlic, lemon juice, oregano, salt, and pepper.
  • Pour the chicken broth around the potatoes, making sure not to rinse off the seasonings.
  • Roast uncovered for 40 minutes, stirring halfway through.
  • Increase heat to 425°F (220°C) and continue roasting for 15–20 minutes until crispy and golden.
  • Garnish with fresh thyme and serve hot.

Notes

Reheat leftovers in the oven or air fryer to regain crispness. For advance prep, roast halfway and finish before serving.
