  • 2 large chicken breasts or 4 chicken thighs
  • 1/2 cup sun-dried tomatoes (drained and chopped)
  • 3 cloves garlic (minced)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/3 cup freshly grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 tablespoon fresh parsley or basil (chopped, plus more for garnish)
  • Salt and black pepper to taste

Instructions
 

  • Pat the chicken dry and season generously with salt and black pepper.
  • Heat olive oil and butter in a large skillet over medium-high heat. Sear the chicken for 5-7 minutes on each side until golden brown and almost cooked through. Remove and set aside.
  • In the same skillet, reduce the heat to medium. Add minced garlic and sauté for about 30 seconds until fragrant. Add sun-dried tomatoes and stir to release their oils.
  • Pour in chicken broth to deglaze the pan, scraping up any browned bits. Stir in heavy cream and simmer for 3-4 minutes until slightly thickened.
  • Add Parmesan cheese, stirring until melted and smooth. Stir in fresh parsley or basil.
  • Return the chicken to the skillet, coat with the sauce, and simmer for 5 minutes until the chicken is fully cooked and the sauce thickens.
  • Serve immediately over pasta, rice, or mashed potatoes. Garnish with extra herbs.

Notes

For a spicy twist, add a pinch of red pepper flakes to the sauce. To store, refrigerate for up to 3 days and reheat gently with a splash of cream or broth.
