  • 1 tablespoon vegetable oil
  • 1 tablespoon fresh ginger, minced
  • 2 cloves garlic, minced
  • 1 pound lean ground beef (93% or higher)
  • 4 cups green cabbage, thinly sliced
  • 1 cup carrots, julienned
  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 2 tablespoons water
  • 1 tablespoon cornstarch mixed with 1 tablespoon water
  • 1 tablespoon sesame oil
  • 2 green onions, sliced

Instructions
 

  • Heat oil in a large skillet over medium heat. Add garlic and ginger and sauté for 30 seconds until fragrant.
  • Add ground beef and cook until browned, about 5-7 minutes. Drain excess fat if needed.
  • Add cabbage and carrots to the skillet. Sauté for 5-8 minutes until tender-crisp.
  • Stir together soy sauce, rice vinegar, and water. Pour over the skillet mixture and toss to coat.
  • Mix cornstarch with 1 tablespoon of water and stir it into the skillet. Cook for 1-2 minutes until thickened.
  • Turn off heat, drizzle with sesame oil, and top with green onions. Serve hot.

Notes

Store leftovers in an airtight container for up to 4 days. Reheat in a skillet or microwave with a splash of water.
