  • 2 cups cabbage, thinly sliced
  • 1 cup Irish cheddar cheese, shredded
  • 1 small onion, finely chopped
  • 3 tablespoons butter
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh chives, chopped
  • 0.25 cup sour cream (optional, for serving)

Instructions
 

  • Peel and grate the russet potatoes, then squeeze out excess moisture with a clean kitchen towel. Thinly slice the cabbage and finely chop the onion.
  • In a large skillet, melt butter over medium heat. Cook onion and cabbage until softened and lightly caramelized, about 6–8 minutes. Season with salt and pepper.
  • In a large bowl, mix grated potatoes, cooked cabbage, onion, and shredded cheddar until well combined.
  • Add more butter to the skillet if needed. Press the potato mixture evenly in the skillet and cook 8–10 minutes per side, until golden brown and crispy.
  • Top with sour cream and fresh chives before serving warm.

Notes

For an even crispier crust, let the skillet sit undisturbed while cooking each side. Try adding crispy bacon bits or swapping Irish cheddar for sharp white cheddar for a different flavor twist.
