Heat butter and olive oil in a large skillet or Dutch oven over medium heat. Add the onion, carrot, and celery, cooking for 5-7 minutes until softened.
Add the ground beef or pork, breaking it apart with a spoon. Cook until browned and slightly crispy. Season with salt and pepper.
Pour in the white wine to deglaze the pan, scraping up any browned bits. Simmer for 2-3 minutes until the alcohol evaporates.
