  • 2 cups whole wheat flour
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1.75 cups buttermilk
  • 1 tablespoon brown sugar or honey optional

Instructions
 

  • Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
  • In a large bowl, combine whole wheat flour, all-purpose flour, baking soda, and salt. Mix well.
  • Make a well in the center and pour in buttermilk and brown sugar or honey (if using). Stir until a shaggy dough forms.
  • Turn dough onto a floured surface. Gently knead for about 30 seconds until it just comes together.
  • Shape into a round loaf. Place on prepared baking sheet. Score a deep cross into the top using a sharp knife.
  • Bake for 35–45 minutes, or until golden brown and sounds hollow when tapped on the bottom.
  • Let cool on a wire rack for 30 minutes before slicing.

Notes

Best served fresh. Freeze slices to enjoy later; toast directly from frozen for a quick snack.
