  • 2 cups long-grain basmati or jasmine rice
  • 4 tablespoons unsalted butter, divided
  • 1 large yellow or sweet onion, thinly sliced
  • 2 cloves garlic, minced (optional)
  • 4 cups chicken or vegetable broth
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Instructions
 

  • Rinse the rice under cold water until the water runs clear to remove excess starch.
  • In a large skillet, melt 2 tablespoons of butter over medium heat. Add sliced onions and cook for 10-15 minutes until golden and caramelized.
  • In a pot, bring broth to a gentle boil. Add rinsed rice and salt, reduce heat to low, cover, and cook for 15-18 minutes until tender.
  • Fluff rice with a fork, fold in caramelized onions and remaining butter. Season with black pepper.
  • Garnish with fresh parsley and serve warm.

Notes

Use sweet onions for extra caramelized flavor, but yellow onions work just as well. For richer flavor, substitute half the butter with ghee.
